Happy Baking

Did it ever happen to you that once you got into the baking mode, you just couldn't stop yourself? Something similar happened to us yesterday, when we were preparing for Mom's birthday: started with traditional Danish birthday layer cake (lagkage), ended up with too much filling and frosting and decided to make a mini-layer cake, this time with blueberries and raspberries, and finally came across this incredibly simple and insanely delicious recipe for the Blueberry Lemon Cheesecake Bars (thank you Sally's Baking Addiction!) - and couldn't stop until whipped a batch of this, new favourite, dessert. Now, we just wish we had a larger fridge… Have a great weekend !

Baking Spree: Blueberry Muffins and Pumpkin Bread

After a long winter, the spring has finally arrived: beautiful and incredibly sunny. There is something different in the air, and suddenly we have so much more energy. After a two-month break, it is also great to get back to baking: this weekend we've been indulging in these crumbly, juicy blueberry muffins and superbly delicious pumpkin bread (not really a spring ingredient, but we could eat pumpkin-everything the whole year round). Both are light, quick and easy to make, and it was so great to fill the house with a fresh aroma of the baked goods. Have a happy spring week ahead!
