Copenhagen Heat Wave

Unthinkable happened this week: the temperature in Copenhagen has been steadily rising to +30C, for 10 days in a row. The place feels like the French Riviera, everyone around is relaxed, glowing and happy. To bear this unusual heat wave, we've been spending lots of time on the beach (great water-jumping facilities in Amager/Kastrup beach and excellent swimming pools at Sluseholmen), have taken a trip to Moens Klint (gorgeous white cliffs!), Louisiana Museum of Modern Art (beautiful park and the beach), and of course ate tons of ice-cream, drank litres of Danish kakao-maelk (chocolate milk, which tastes amazing ice-cold) and enjoyed long nights on the terrace with chilled rosé. For dessert, we baked the ultimate summer treat: this Lemon Cake with Raspberries and Pistachios is perfect, served warm with a huge scoop of vanilla ice-cream. Have a fantastic weekend!
