Have a Cozy Weekend

Is it warm anywhere in the world this weekend? Copenhagen has been freezing, with snow, rain, snow again and really strong winds. The next place we're flying to, Moscow, is even chillier: minus 18C now and entire next week. So, after a few brief attempts to venture outside, we are now staying in and enjoying home-made brunch (check out these scrambled eggs by The Londoner: they were sooooo good, we inhaled them, hence no pictures), hot chocolate, a good book (currently reading The Imperfectionists, by Tom Rachman. It's excellent), new dark and twisty series on HBO (the first episode of True Detective is awesome), moving into the night with a glass of wine and all times favourite Johan Bulow lakrids. What cool things are you doing this weekend? Have a good one!

Home-made Granola (Energy) Bars

For anyone on the go, these home-made granola bars could be a fantastic alternative to various energy snacks from a health-food store. It was such a surprise to realise that it took us just a bit more than 30 minutes end-to-end (including baking time!) to make a dozen of these chewy, yummy, soft and juicy granola bars. No sugar, butter, 100% healthy and surprisingly delicious. Enjoy!

It's a very quick test, and you are guaranteed to have fun and learn something new.

Lemon Melting Moments and Other Things This Weekend

What have you been up to this weekend? The sun has been shining in Copenhagen the whole of Sunday, and we managed to get some fresh air + a hefty doze of vitamin D in Frederiksberg Gardens, including a visit to the skating rink (so much fun). in London, some of us were super lucky to get the tickets to this much-talked-about play, and enjoy a night out (sans kids) at the theatre, as well as a pre-party. 
To wrap up this lovely weekend, we baked these amazing Lemon-Sandwich Cookies, aka Lemon Melting Moments: entire house filled with a scent of happiness. Have a great week ahead!

Puff Pastry, a Love Story

Are you a fan of puff pastry, aka butterdej? You know, the ready-made, supermarket-bought variety? We haven't yet mastered the croissant make-from-scratch skills, hence always keep a few blocks of the butterdej in our freezer. There are tons of things you can make it with it, in under 25 minutes, whether you need quick appetisers, something for dinner and dessert or your fresh morning coffee. Our favourites include pictured savoury cheese & bacon puff pastry tarts and of course chocolate croissants (the house smells amaaaaazing). You can experiment and use any ingredients you like/have in your fridge, and make, e.g. cherry tomato & cheese squares, or quick & simple cheese danish, or - our top choice we can't wait to taste - this awesome looking sweet baby cheeses Enjoy!

Treat for the Weekend: Lemon Drizzle Cake

The making of this soft, heavenly lemony cake will take 40 min tops (including baking time), and all your loved ones will be happily munching on it with their morning coffee, afternoon tea or dinner dessert. New Year, New Baking Adventures: Berliners

Hope the start of your New Year has been delicious, relaxing and happy. Here we have ventured into the unknown territory: first experience with home-made Berliners (Berlinere, på dansk). Berliners, also known as North German doughnuts (without a central hole) filled with jam, custard or chocolate, were traditionally made for the New Year celebration, hence we started working on ours already in the morning of December 31. The recipe is from Claus Meyer's generous Bagebog, or you can follow this Berlinere Opskrift. It is quite a job (the dough part, we recommend outsourcing it to your stronger half in the family), but the results are so worth it. Best eaten warm with a cup of tea or hot chocolate: buon appetito!
